Gestern erzählte mir Professor Caprese von einem Bäcker aus Neapel, der Ende des 19 Jahrhunderts Ärger mit den Behörden bekam, weil seine Brötchen kleiner waren als vorgeschrieben. Mehl und überhaupt Backzutaten waren zu dieser Zeit sehr teuer und der Bäcker wusste sich nicht zu helfen. Die Behörden bestanden aber auf größeren Brötchen. Der Umfang war genau vorgegeben. Eigentlich stand der Bäcker kurz vor der Pleite, da hatte seine Tochter eine Idee. Man könne doch Löcher in die Mitte der Brötchen machen, dann stimme der Umfang und es wären auch nicht mehr Zutaten.
Das gefiel dem Bäcker und er machte, was seine Tochter vorgeschlagen hatte. Die Brötchen nannte er Anelli di Pane – Ring-Brötchen.
Die Behörden waren nun noch mehr verärgert. Aber die Menschen liebten diese Brötchen so sehr und protestierten tagelang lautstark vor der Bäckerei. Der Bäcker durfte die Anelli weiter backen und er wurde in ganz Italien bekannt.
Die Geschichte gefiel mir und ich habe diese Anelli di Pane im Kochlabor entwickelt. Ohne Hefe und ohne Gehzeit. Schnell und einfach – und ich glaube, ihr werdet sie mögen:-)
